Foolproof Grilled Tandoori Chicken Salad

If it’s easy you want, it’s easy you shall have.  How would you like to rustle up dinner in about 5 minutes in the morning, then spend about 10 minutes cooking it and getting it on the table after work?  Try this …

  1. Take 1 cup of natural yoghurt and about 3 tablespoons of any commercial Tandoori paste from the supermarket.  Mix together in a shallow bowl.  (Use more or less, to taste.)
  2. Slice length-ways through two chicken breast fillets so that they’re thinner by half and sit them in the bowl of marinade, making sure to coat them all over.  Cover with a lid or cling wrap then refrigerate for at least an hour, or all day while you’re at work.
  3. When you’re ready to cook the chicken, heat your Chef’s Grill so that if you sprinkle a couple of drops of oil on it, they sizzle nicely.
  4. Scrape off excess marinade as you take fillets out of the bowl, and place on the Chef’s Grill to cook.
  5. Turn after 2-3 minutes or until cooked through (depending on thickness).  Cook on other side.
  6. Meanwhile, put together a simple salad of iceberg lettuce, cos lettuce, spinach leaves, radicchio or whatever else takes your fancy.  Perhaps add a sliced tomato and some cucumber slices, and drizzle some lemon juice and olive oil over the top.
  7. Plate up the salad on individual plates and add a chicken fillet.  Voila!!  Dinner is served!!
