Individual Crustless Pea and Ham Quiches



·         2 eggs

·         1 tbs melted butter

·         1½ cups milk

·         Salt and pepper to taste

·         ½ cup self raising flour

·         ¾ cup shredded ham, diced

·         ½ cup peas

·         ½ cup red capsicum, diced

·         1 small onion, finely chopped

·         ½ cup shredded cheddar cheese

The fun

1.       Preheat oven to 180⁰C.

2.       Mix together eggs, melted butter, milk, salt and pepper.

3.       Add flour and stir.

4.       Place Flexibake tartlets on an oven tray.

5.       Pour a little of the mixture into the bottom of each of the Flexibake tartlets.

6.       Mix together the ham, peas, capsicum, onion and cheese and spoon into each tartlet.

7.       Pour the remaining egg mixture into the tartlets to about 3mm from the top.

8.       Put tray of tartlets into oven and bake for around 20 minutes.


– Add more fibre by using wholemeal flour or by varying the vegetable ingredients such as grated zucchini, carrot or sweet potato.
– Reduce the fat content by using low fat cheese and milk.
– Serve with a crisp, fresh salad.
